Our oysters are "Maruemon"
The oysters we serve are "Maruemon"
-
They are produced using the cultivating seedling method, in which young oysters from Miyagi are attached to scallop shells and grown. This is the brand of oyster that is shipped most frequently from Akkeshi. The waters off Akkeshi have low temperatures, so the fish grow slowly and it takes about three years from seed to shipping. One of the reasons for its deliciousness is the geography of Akkeshi Bay and Lake Akkeshi, where plankton-rich seawater and nutrient-rich freshwater mix together, allowing the fish to continue to absorb nutrients for a long period of time - three years. Our oysters are delivered directly from Osawa Suisan in Akkeshi every day!
